portanan by KlarisoncaresYou just put the stopper in, hold the pump on top of it (it doesn't really lock) and pump out the air until you hear a little "click" sound. Leave the wine your fridge which will also slow the fermentation. Then when you are cooking, take the wine out of the fridge to bring take it down room temperature for dinner.
